今、その場で決めたことや、予想、予定などを伝えるとき、〈 will～（動詞の原形〉「～します、～でしょう」を用いて表現します。キーフレーズのI’ll take this one.は、店員さんから「5分後に閉店します」と言われたので、その場で買うと決めて伝えていることがわかります。

他にも、It’ll be sunny tomorrow.「明日は晴れるでしょう」のwillは「予想」、「今日のストーリー」にある、Will you be open tomorrow? と、We will be open again on Monday.のwillは、いずれも「予定」を表していますね。

ケンが次に探しているのは自分用のシャツ。
長袖から半袖まで、色々と試しているうちに、閉店の時間になってしまいました。
そこで、「これにします。」とようやく決めました。
「明日も営業していますか？」とケンが聞くと、明日は日曜日でお休みだそうです。
月曜日はまた来るの、ケン？

Store clerk: How about this one?	店員：こちらはいかがですか？
Ken: This looks nice.	ケン：よさそうですね。
Ken: But I like that one too...	ケン：でもこれも好きだけど…。

probablyは「おそらく」という意味ですが、80～90％程度のかなり高い可能性があることを示しています。
have nothing to do with ～は「～とはまったく何の関係もない」という意味です。nothing をsomething に置き換えると「何かしら関係がある」、littleに置き換えると「ほとんど関係がない」、a lotに置き換えると「大いに関係がある」になります。
excellent opportunityは「素晴らしい機会」、 passionate about～は「～に情熱を持って」。
