〈～（名詞）＋…（過去分詞〉で、「…された～」という意味になります。過去分詞が後ろから名詞を修飾して、形容詞の働きをします。キーフレーズは、topped with onion ringsが hamburgerを修飾していますね。直訳は「オニオンリングがのせられたハンバーガーをください」です。
過去分詞一語で名詞を修飾する場合は、〈…（過去分詞）＋～（名詞）〉で、通常、過去分詞を名詞の前に置きます。例えば、spoken language「話される言葉→話し言葉」、broken window「割られた窓→割れた窓」のようになります。

海外出張では、食事や買い物など全て一人で済ますことが多いです。

shake one’s headは「首を左右に振る」という意味ですが、状況によって、否定・拒否・不賛成・疑念・落胆などさまざまな気持ちを表します。
ちなみに、shrug one’s shoulders「肩をすくめる」という表現もあります。これは、通常、困惑・あきらめなどを表わします。
landlordは「大家」、dispose of ～は「～を捨てる／廃棄する／処分する」、shattered「だめになった」、water-damaged「水に濡れて傷んだ」、rotten「腐った」、durian「ドリアン」。
